Food for Fall: Squash and Stews #Journey #Inspiration

I love to cook… and eat.

This time of year I love cooking up different stews and chilis and other comfort foods when the air turns crisp.

I also enjoy the various types of winter squash, such as acorn squash, butternut squash, spaghetti squash, and I guess there are some others that I’ve never tried before like ambercup, delicata, and sweet dumpling.

I love to roast acorn squash and fill it with a mixture of quinoa with cranberries and nuts and other goodies. The end product just smells and tastes like Fall.

Isn’t it funny how we start to add pumpkin to everything in the Fall too.

Except coffee. Pumpkin spice in coffee is not funny! 🙂

In some grocery stores around here, pumpkin isn’t even available from January to August.

  1. Snow peas, Beetroot, cauliflower, roast with olive oil and spices, nom, nom, nom. Cooking is therapeutic as long as it’s not for a house party, that will be stressful. 🤤
