Indian Butter Chicken

Oh. My. Goodness. I just made the best tasting Indian Butter Chicken.

I got the recipe from the Food Network Magazine and I tried it to see if it is something I would want to try with my three little munchkins. It was amazing!

I am going to try to make it next weekend when my kids are here and if they like it, it might become my new go-to chicken recipe.

The recipe serves four but I think I will double it next time for more sauce and leftovers! The recipe uses some “exotic” spices that most cooks might have on hand like turmeric, garam masala, and cumin. Despite the spices used there isn’t much “heat” in the recipe which could be remedied by adding more cayenne pepper or something similar.

For sides you can buy (or make) naan, Indian flatbread, cook rice to pour the Indian Butter Chicken over, and add a veggie like steamed broccoli or carrots.

The recipe is a good, home-cooked, comfort meal. Thanks to the butter (6 tbsp) and heavy cream (3/4 c). But that’s why you exercise right? It leaves you feeling satisfied when you are done.

Since it is made in the Instant Pot, this could be a hindrance to some cooks that don’t have a pressure cooker. But, because it is made in the pressure cooker it is ready in less than 30 minutes, maybe another 10 minutes for prep.

I love my Instant Pot. It is perfect for making quick family meals after work or anytime your schedule is tight. I make chilis, stews, curries, pot roasts, soups and lots more with this versatile cooker that also doubles as a slow cooker and even a conventional deep pot for sauteing too.
